Hearty Vegetable Soup

This soup is delicious, warming, and full of nourishment. It's perfect for those cold evenings when you're longing for something to warm you up. Follow the recipe below!

What You Need

  • 2 tbsp. extra virgin olive oil

  • 1 cup chopped onion

  • 2 cups chopped carrots

  • 4 cloves garlic, minced

  • 4 cups vegetable broth

  • 3 cups sweet potatoes, cut Β½ inch thick

  • 3 tsp. dried thyme

  • Sea salt + freshly ground black pepper to taste

  • 1 cup frozen or fresh corn

  • 1 Β½ cups chopped kale, thick ribs removed

  • Optional: 2 shredded chicken breasts

What To Do

  1. Heat olive oil in a large pot over medium heat.

  2. Add onions and carrots and sautΓ© for 3-4 minutes. Add garlic and sautΓ© 30-45 seconds longer.

  3. Pour in broth and add sweet potatoes, thyme, sea salt, and pepper. Bring ingredients to a boil and then reduce to medium-low heat. Cover pot and simmer for 20-30 minutes or until potatoes are tender.

  4. Add corn and kale and cook 5 minutes longer. Add shredded chicken breast and stir.

  5. Serve warm and enjoy!
