{SUPER EASY} Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

What You Need

  • 1 cup rolled oatmeal + 1/2 cup, separated

  • 1 cup oat flour*

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon sea salt

  • 1/4 cup + 2 tablespoons melted coconut oil

  • 1/4 cup coconut sugar

  • 1/4 cup pure maple syrup

  • 2 eggs

  • 1 teaspoon pure vanilla extract

  • 3/4 cup vegan chocolate chips + 2 tablespoons, separated

  • Optional: 1/2 cup walnuts, chopped

What To Do

  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside.

  2. In a medium bowl, whisk together all of the dry ingredients: 1-cup oatmeal, oat flour, baking powder, baking soda, cinnamon, and sea salt.

  3. In a larger bowl, whisk together all of the wet ingredients: coconut oil, coconut sugar, maple syrup, eggs, and vanilla. Whisk until well combined (color looks caramel).

  4. Add the dry ingredients to the wet ingredients and combine. Fold in 3/4 cup chocolate chips, 1/2 cup oatmeal, & walnuts and stir until everything is coated and well combined.

  5. Scoop 2-tablespoon balls onto the prepared baking sheet. Place remaining 2-tablespoons of chocolate chips on top of cookies.

  6. Bake for 8-12 minutes, or until cookies are lightly golden brown. Carefully lift cookies from baking sheet and transfer to a cooling rack. Allow to cool completely and enjoy!

*Can make homemade oat flour by blending rolled oats. Make sure oatmeal is finely ground, as coarse flour will not hold together well.
