{SUPER EASY} Fried Rice

5- Minute Fried Rice

This recipe defines lunchtime made easy. Simple ingredients with big flavors and lots of nourishment. Make this ahead to grab and go or cook it up in a pinch!

What You Need

  • 1 tablespoon avocado oil
  • 1/2 medium red bell pepper, chopped
  • 1/2 cup cabbage & carrot blend, shredded
  • 1/2 cup spinach
  • 2 eggs
  • 1 cup brown rice, cooked
  • 1 teaspoon tamari
  • 1 tablespoon, hemp seeds
  • Pepper to taste

What To Do

  1. In a large skillet, heat avocado oil over medium heat. Add bell pepper and cabbage & carrot blend. Cook for 2 minutes.
  2. Add spinach and cook until starting to wilt, about 1 minute. Season vegetables with pepper to taste
  3. Make space in the center of pan and crack eggs. Pan scramble and mix veggies in with the egg. 
  4. Add brown rice and tamari and stir until well combined. Top with hemp seeds and enjoy!
