{SUPER EASY} Vegan "Bolognese"

Vegan "Bolognese"

10 ingredients, bold flavors. Enough said.

What You Need

  • 1 tbsp. extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 onion, chopped
  • 8 pieces tempeh, chopped
  • Sea salt & pepper to taste
  • 1 tsp. red chili flakes
  • 1/4 cup red wine
  • 1 8 oz. can tomato sauce
  • 1/2 cup spinach, chopped
  • Optional: 2 tbsp. fresh basil, chopped
  • 8 oz. pasta (we used Banza fusilli)

What To Do

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sautΓ© until fragrant, about 30 seconds. Add onion and tempeh, and sautΓ© for 3-4 minutes, or until tempeh begins to crisp. Stir frequently and season with sea salt, pepper, & red chili flakes to taste. 
  2. Add red wine to deglaze the pan and let alcohol cook out, about 1 minute. Add tomato sauce and reduce heat to low. Cover and let simmer for 15-20 minutes. 
  3. Cook pasta according to box instructions. Top pasta with sauce and garnish with spinach & fresh basil. Enjoy!
