{SUPER EASY} Nutty Banana Bread

Nutty Banana Bread

This banana bread is moist and crumbly with a nutty crunch. It provides the perfect bite to satisfy your sweet tooth!

What You Need

  • 3 medium ripe bananas
  • 1/2 tsp. vanilla extract (alcohol free)
  • 1 egg
  • 3 tbsp. coconut oil, melted
  • 1/2 cup coconut sugar
  • 2 tbsp. maple syrup
  • 3/4 cup unsweetened dairy-free milk (try our almond milk recipe)
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. sea salt
  • 1/2 tsp. cinnamon
  • 1 1/4 cup almond meal
  • 1 1/4 cup gluten-free flour blend (or whole wheat flour)
  • 1 1/4 cup rolled oats
  • Optional: 1/2 cup chopped walnuts

What To Do

  1. Preheat oven to 350 degrees. Line a 9x5-inch loaf pan with parchment paper. 
  2. Mash bananas in a large bowl. In same bowl, add vanilla, egg, coconut oil, coconut sugar, maple syrup, and dairy-free milk. Whisk well to combine. 
  3. In a separate bowl, combine dry ingredients: baking powder, sea salt, cinnamon, almond meal, flour, and oats. Add the dry ingredients to the wet ingredients and stir. Fold in the walnuts until everything is combined. 
  4. Pour the batter into the lined loaf pan and bake for 45-50 minutes, or until a toothpick comes out clean. 
  5. Let cool completely before serving and enjoy!
