{SUPER EASY} Double Chocolate Muffins

Double Chocolate Chip Muffins

These muffins are perfect as a sweet complement to breakfast, as part of a snack, or for a yummy dessert (with some coconut ice cream - YUM). Find the super easy recipe below!

What You Need

  • 1/4 cup cocoa powder
  • 2 tbsp. oat flour
  • 2 tbsp. coconut sugar
  • 1/2 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. sea salt
  • 1/2 cup almond butter
  • 1/2 cup unsweetened apple sauce
  • 2 tbsp. honey
  • 1 tsp. vanilla extract
  • 1 egg
  • 1/4 cup dark chocolate chips
  • Optional: 1/4 cup chopped walnuts

What To Do

  1. Preheat oven to 350 degrees. Grease muffin tin with avocado or coconut oil spray. (Note: Fill any empty tins with water for even baking)
  2. Combine all dry ingredients in a bowl: Cocoa powder, oat flour, coconut sugar, baking soda, baking powder, and sea salt. 
  3. In a separate bowl, combine wet ingredients: Almond butter, applesauce, honey, and vanilla extract. Add the dry ingredients to the wet ingredients and stir. Add the egg and stir until well combined. 
  4. Stir in the chocolate chips and walnuts and pour batter into muffin pan. Bake for 16-20 minutes or until a toothpick comes out clean. 
  5. Enjoy!
